Dinnertime: Baby Back Ribs

I totally forgot to take photos of the cooking process, but hopefully the recipe will still be easy to follow!

This is a special night only meal because it's expensive and not the healthiest of meals.  You'll need to do the prep work the night before you want to eat them.

Ingredients
2 racks of baby back ribs
1 2 liter of Coca-Cola (or a cola knockoff)
3/4 cup brown sugar, plus 2 tablespoons for basting
2 1/2 cups BBQ sauce, plus more for basting

Cut your racks of ribs into sections (about 3-4 bones per section). Grab your biggest pot, like a Dutch oven, and place the ribs on the bottom, then pour the cola, BBQ sauce and brown sugar over them. Place the pot in the fridge and marinate for at least 12 hours. 

The next morning, pre-heat your oven to 170 degrees. Place the dutch oven (with lid) in the oven and cook for 8 hours. After the 8 hours, take another cup of BBQ sauce, with about a tablespoon or two of brown sugar, and mix together in a bowl - this will be your basting mixture.

Turn on your grill (medium heat) - as you grill the ribs, baste each side one time and cook until the ribs are a little crispy on each side (about 5-8 min for each side). 


Serve with a healthy side like grilled veggies or a big salad. (We did twice baked potatoes which is not healthy. Whoops!)  Add a cold drink and you're set!


Serves 6! Enjoy. 
We had a ribs party on Friday. So fun!
