Baked French Toast

Thursday, December 22, 2011

This week, in honor of Christmas, I'm posting one of my favorite recipe for the holidays - Baked French Toast. We have made this for the last few years and our family LOVES it. I hope you will too!!

 Ingredients:
1 pound (1 big loaf) French bread, cut diagonally in 2 inch slices – 14 pieces can normally fit in the baking pan
4 eggs
1 cup half and half
1 teaspoon vanilla extract
¼ teaspoon cinnamon

Optional Syrup:
1/3 cup butter
¾ cup brown sugar
3 tablespoons light corn syrup

Spray a 9 x 13 inch cooking pan with cooking spray. Arrange slices of bread in the bottom.

In a large bowl, beat together the eggs, cream, vanilla, cinnamon and pour over the bread slices, cover and refrigerate until morning (12 hours at least).

The next morning, flip each slice of bread over in the pan so the soggy side is up. Let it sit outside the fridge while your oven pre-heats to 350. Place the foil back on the pan and bake for 20 minutes.

Optional syrup: In a small saucepan, combine the butter, sugar and syrup, heat until bubbling while the bread is baking.

Once the 20 minutes is up, flip the bread again, drizzle the syrup on top and bake for another 20 minutes, uncovered.

Serve with fresh fruit and enjoy!
 Serves 6-8 (two slices each).

Alternatives to Recipe:
You can also bake without the syrup and just use regular maple syrup (both are equally yummy). Just be sure to bake on both sides 20 minutes each.
If you don't have vanilla extract, use vanilla flavored half and half!
