Dinnertime: Chinese Fried Rice

My friend Lorean made this dish a while ago and her husband posted the picture on Instagram - ever since it's become of my favorites!


Ingredients
2 boneless, skinless chicken breasts, sliced into small pieces
1 cup uncooked rice
1 cup mixed veggies - frozen
soy sauce or stir fry sauce
coconut oil or butter
1 egg
spring or egg rolls (optional)

Cook your rice according to the instructions and defrost the veggies (about 1 min microwaved with a teaspoon of water).

 While that is cooking, heat about a spoonful of coconut oil over medium high heat, salt and pepper your chicken and cook until brown. Set aside. 

 Grab a large skillet, pour about 4 tablespoons of soy sauce/stir fry sauce into the pan ad turn the heat on medium high. Add in the rice and veggies and toss until hot, about 3-4 minutes.

 Add in your chicken and turn the heat down to medium.

 While your stir fry is being heated, scramble your egg over high heat in a small frying pan. 

Divide out the stir fry into two bowls, top with egg and a dash of soy sauce. Serve with egg or spring rolls and dipping sauce. 

Serves 2! Enjoy!
