Dinnertime: BBQ Chicken Pizza

This is a Mellow Mushroom knock-off (with a lot more toppings)! So easy and yummy!

Ingredients
1 roll of pizza dough
2 boneless, skinless chicken breasts
BBQ sauce (we use Sweet Baby Ray's)
1 orange pepper
4-6 slices of bacon
1/4 sweet onion
shredded cheese mix - we use cheddar and mozzarella

Pre-heat your oven according to the pizza dough directions. Grill your chicken, pepper and onion until cooked and brown. (Marinate your chicken in some of the BBQ sauce to add some flavor!)

While the food is grilling, lay out your dough on a cookie sheet (spray with a little cooking spray first) and spread a thin layer of BBQ sauce on top.

Once the chicken, pepper and onion are done, dice up into small pieces. 

Layer the grilled toppings on the dough, then sprinkle with the bacon and top with the cheese. 

Cook according to the dough directions.

Serves 4 - Enjoy!

Alternatives to the recipe:
Substitute purple onion for the sweet onion.
Add a handful of chopped cilantro before baking.

  1. I use Sweet Baby Rays for mine too! Trader Joe's has a great honey wheat crust, and for other pizzas, a little bit of honey drizzled on the crust before cooking is surprisingly AMAZING even with italian-style toppings. Other magical ingredients: bacon and sweet corn. Thanks for posting this, I'm inspired to cook some myself!

  2. Have you ever tried grilling your pizza? Surprisingly easy and I love the lightly charred effects the grill makes on the edges! You are looking super precious, by the way!!!
