This is a recipe my husband found online and we've (of course) modified it a bit.
Ingredients
1 whole chicken (2 breasts, 2 thighs, 2 legs, 2 wings) with the skin on
2 eggs
1 - 1.5 cups of buttermilk
2 cups flour
2 tablespoon of each spice - salt, garlic, pepper, Tony Chachere's, paprika (be sure to season to your taste - we like ours a little spicy)
1 tablespoon of poultry seasoning
1/2 gallon cooking oil - Smart Balance is good or regular vegetable oil works too
Grab your biggest pot, fill with the oil and heat over high until 350 degrees, then drop the heat back a little so it doesn't boil over. (Make sure there are at least 2-3 inches of space at the top of your pot otherwise when you add the chicken, the oil will rise and boil over the sides.) Also, pre-heat your oven to 250 degrees.
While your oil is heating up, whisk the eggs in with the buttermilk in a large bowl and place chicken in it to soak for a few minutes. While it's soaking, mix the flour and spices in a separate large bowl.
Piece by piece, pull them out of the buttermilk/egg wash and coat thoroughly in the spice rub. (We use our left hand to pull the chicken out of the wet bowl, and our right to rub the spices on - it keeps your hands from getting caked in the mix.)
Let the flour/spice rub sit on the chicken for a few minutes so it sticks.
Add the chicken to the oil and cook - do breasts and thighs first for about 8-10 minutes and take out; then the legs and wings for 5 minutes.
Place on a cooking sheet covered by a two-layer paper towel. Bake for 10 minutes - this is what reduces the grease, but keeps the skin crispy.
Serve with your favorite side! Serves 3-4 people.
