I posted a similar recipe here, but have modified my methods slightly. Apologies for the lack of photos, but this recipe was requested from a few people after I posted my one picture to Instagram!
Ingredients
8-10 small red potatoes
2-3 heads of broccoli
1/2 sweet onion
2 garlic cloves
1/2 stick butter
3 tablespoons olive oil
1 tablespoon dried rosemary
1 tablespoon basil
salt and pepper
Pre-heat your oven to 400 degrees. Wash your potatoes and stab with a fork a few times to make air holes - microwave for 8-10 minutes so they're soft, then dice into bite sized pieces.
Wash and slice your broccoli into "trees", leaving some of the stalk on. Chop up the onion (very small pieces works best), as well as the 2 cloves of garlic.
Grab a roasting tray (a baking sheet works too), and spray with some cooking oil, then toss everything onto the pan. Melt the butter in a cup until it's creamy then pour over, making sure it's totally coated - I add a little olive oil as well. Sprinkle with the herbs, plus salt and pepper.
Bake for 30 minutes on the middle rack, tossing halfway through.

Serves 4. Enjoy!
Alternatives to the recipe:
You can also add chicken to the mix, just make sure it's sliced into smaller pieces so it cooks evenly with everything else (we did two small chicken breasts).
Cauliflower is also good roasted with this mixture.
If you don't like rosemary, use thyme.
