I don't normally post recipes on my blog (actually, I've never posted ANY to date), but I promised to share this recipe that I talked about a week ago - a roasted red pepper sauce.
This is seriously easy and will impress your friends and loved ones*. You'll need:
2 red bell peppers
2 cloves garlic
1/4 sweet onion
extra virgin olive oil
salt and pepper
Turn your oven to broil on its high setting. Wash your bell peppers and then take a little olive oil and coat the skin thoroughly. Place onto a baking sheet on one side. While waiting for your oven to heat, chop up your onion into bite sized pieces and slice your 2 garlic cloves into thin slices - set aside.
Once your oven is ready, pop in the peppers and turn on the light. You'll have to watch them cook - it's about 1-2 min per side. Once your first side is nice and cooked (parts of it should look brown/black where the skin is burning), then open the oven, pull out the rack, and with a pair of tongs, flip the peppers to another uncooked side. Do this until all sides are cooked, take out of oven and set on a cutting board to cool - if you go ahead and slice them in half it will help cool them quicker.
Once they are still warm, but cool enough to handle, peel the skins off, cut out the seeds and white membrane and slice into long pieces. Toss them into a food processor or blender, along with the garlic and onion, drizzle some more olive oil into the processor, add a dash of salt and pepper and blend into a sauce.
Voila! You're done - I told you it was easy!
Last time we ate this sauce, I poured it over grilled chicken, topped with fresh spinach and added some roasted potatoes and veggies on the side. Yummy! You can also add the sauce to regular spaghetti sauce to add a little flavor and kick. The red peppers are sweet and not spicy at all.
So there you go - now go impress someone with this easy recipe!
*In fact, my friend Beth taught me how to roast peppers - she added roasted red peppers to her pasta sauce for a dinner she cooked us one night and it was amazing! We were all very impressed!
