This recipe actually comes from my bestie Crystal, but slightly modified by me. It's a very easy, crowd pleaser and takes about 30 minutes to make!
(Sorry for the photo quality - Matt had our good camera, so these are via iPhone.)
Ingredients
2 lbs. lean ground turkey
2 cans kidney beans
1 can black beans
2 cans tomatoes
1 1/2 cups low-sodium chicken or vegetable broth
2 tablespoons of chili powder
2 teaspoons red pepper (ground not flakes)
2 tablespoons Texas Pete
salt and pepper
Season your turkey with a little extra chili powder, salt and pepper and cook over medium high heat, stirring often until brown.
While your turkey is cooking, drain your beans and toss into a large pot (or Dutch oven), along with the chili powder, Texas Pete, red pepper, broth and the tomatoes and bring to a boil. Cook for 3-4 minutes on a boil.
Drain your meat of the grease, and add to the Dutch oven. Reduce heat and cook on medium low for 20 minutes.
Serve with a few sides to add to your chili - sour cream, shredded cheese and Frito's are my favorite. I also leave the Texas Pete out for those who like it more spicy! Serves 4-6. Enjoy!
Alternates to the recipe:
A cup of frozen sweet corn is also good!
A small can of tomato paste makes it a thicker consistency.
White beans (1 can) are also good in the chili.
PS - How about a vote for the blog? We are slipping down the ranks :)
